4-ingredient triple choc fudge brownie pancakes

Decadent pancakes topped with cream, cocoa, and fresh fruit for extra indulgence.
Ingredients:
  • 4 eggs, separated
  • 560g packet The Little Brownie Company triple choc fudge brownies mix
  • 112.50 gm self-raising flour
  • 84.98 gm milk
Instructions:
  • Whip egg whites with an electric mixer until they form stiff peaks.
  • In a bowl, mix together brownie mix and flour. Create a well in the center and add the egg yolk, milk, and half of the egg white. Stir until well combined, then gently fold in the remaining egg white.
  • 1. Preheat a large greased non-stick frying pan over low heat. 2. Spoon 2 level tablespoons of mixture into the pan, shaping them into rounds. Repeat to make a total of 3 pancakes. 3. Cook for 2 to 3 minutes until the pancakes are firm on the bottom. 4. Flip the pancakes and cook for another 2 to 3 minutes until fully cooked. 5. Transfer to a plate and loosely cover with foil to keep warm.
  • Continue cooking the rest of the mixture in batches, making sure to generously grease the pan each time. Serve the pancakes right away.
