4-ingredient Neapolitan Viennetta recipe

Create a heavenly dessert with just 4 ingredients, make ahead and freeze for up to 3 months for convenience. Simply prep and enjoy when needed.
Ingredients:
  • 200g dark chocolate, melted
  • 2L tub neapolitan ice-cream
  • 300ml thickened cream
  • Cocoa powder, to dust
Instructions:
  • In a 7cm-deep, 10 x 20cm loaf pan, layer plastic wrap with overhang on the sides, then add a sheet of baking paper with overhang on the long sides.
  • On a clean, flat surface, lay a large sheet of baking paper and outline six rectangles by tracing around the base of the pan. Spread 1 tablespoon of melted chocolate thinly inside each rectangle using a palette knife or the back of a spoon. Let it sit until the chocolate sets.
  • Take a scoop of the strawberry ice-cream from the neapolitan tub and place it in a bowl. Allow it to soften for 5-10 minutes. Spread half of the softened ice-cream evenly in a pan. Layer a chocolate rectangle on top. Add the rest of the strawberry ice-cream and spread it evenly. Finish with another chocolate rectangle. Freeze for 1 hour or until firm.
  • Place the vanilla ice-cream in a bowl to soften for 5-10 minutes. Spread half in the pan evenly, followed by a chocolate rectangle. Repeat with the rest of the ice-cream and top with another chocolate rectangle. Freeze for 1 hour until firm. Enjoy!
  • Take the chocolate ice-cream out of the freezer and let it sit in the tub for 5-10 minutes to slightly soften. Spread half of it evenly in a pan and place a chocolate rectangle on top. Repeat with the remaining ice-cream and chocolate rectangle. Cover with overhanging baking paper and plastic wrap, then freeze for 2 hours until firm.
  • Whip the cream until firm peaks form using electric beaters. Transfer into a piping bag fitted with a flat nozzle. Invert the cake onto a serving plate with the chocolate ice-cream facing down. Pipe cream swirls on top, sprinkle with cocoa, and serve right away or freeze until ready to enjoy.
