4-ingredient copycat Thin Mints with perfect mint flavor, ideal for Christmas.
Ingredients:
  • 10 ounces vegan dark chocolate chips (such as Nestle® Toll House® Simply Delicious)
  • 10 ounces vegan semisweet chocolate chips (such as Nestle® Toll House® Simply Delicious)
  • 1 tablespoon coconut oil
  • 1 teaspoon peppermint extract
  • 36 buttery round crackers (such as Ritz®)
Instructions:
  • Prepare baking sheets by lining them with parchment paper.
  • In a large microwave-safe bowl, mix dark chocolate chips, semisweet chocolate chips, and coconut oil. Microwave for 1 minute, stir, then microwave in 30-second intervals, stirring each time, until the mixture is melted and smooth. Stir in peppermint extract.
  • Dip each cracker into the velvety melted chocolate using a spoon to ensure even coating. Place the chocolate-coated crackers onto a baking sheet lined with parchment paper. Repeat with all crackers and chocolate, gently reheating the mixture if needed for a smooth consistency.
  • Chill cookies until chocolate sets, approximately 10 minutes. Keep cookies covered in the fridge.
