Recreate Macaroni Grill's popular penne rustica dish at home with this easy copycat recipe.
Ingredients:
  • 1 pound penne pasta
  • 0.5 pound cooked small shrimp
  • 0.5 cup chopped prosciutto
  • 2 teaspoons olive oil, or to taste
  • 2 (5 ounce) skinless, boneless chicken breast halves
  • 1 pinch salt and ground black pepper to taste
  • 3 tablespoons butter
  • 2 tablespoons minced garlic
  • 3 tablespoons Marsala wine
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 0.5 cup milk
  • 0.5 cup chicken broth
  • 1 tablespoon cornstarch
  • 1 tablespoon brown mustard
  • 2 teaspoons minced fresh rosemary
  • 0.5 teaspoon minced fresh thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon cayenne pepper
  • 3 tablespoons grated Parmesan cheese
  • 1.5 teaspoons paprika
Instructions:
  • Bring a pot of salted water to a vigorous boil. Cook penne until al dente, about 11 minutes. Drain and combine with shrimp and prosciutto in a large bowl.
  • Preheat a sizzling outdoor grill and lightly oil the grate. Brush chicken breasts with olive oil, season with salt and pepper, then grill until reaching 165°F (74°C), around 5 minutes on each side. Let it cool slightly, then slice into strips and add to the penne mix.
  • Heat the oven to a blazing 500 degrees F (260 degrees C).
  • Melt butter over medium-low heat, then add garlic and cook until softened but not browned, about 5 minutes. Pour in Marsala wine and cook for another 5 minutes. Stir in heavy cream, Parmesan cheese, milk, chicken broth, cornstarch, mustard, rosemary, thyme, salt, and cayenne pepper. Bring the sauce to a simmer and cook for about 10 minutes until flavors meld, stirring occasionally.
  • Drizzle sauce over the penne, ensuring it is well combined. Place the mixture into a 9x13-inch baking dish and sprinkle with Parmesan cheese and paprika.
  • Bake until the top is lightly golden, about 10 to 12 minutes in the preheated oven.
