Whip up a quick and delicious rustic Italian pasta dish in just 20 minutes!
Ingredients:
  • 500g Italian sausages, casings removed
  • 1/2 bunch kale, trimmed and sliced
  • 2 garlic cloves, chopped
  • 125.00 gm dry white wine
  • 312.50 ml tomato passata
  • 300g penne
  • Sea salt, to taste
  • Black pepper, freshly ground, to taste
  • 30.00 ml Pecorino cheese, freshly shredded
Instructions:
  • 1. Boil salted water in a large pot. Simultaneously, heat a heavy frying pan over medium-high heat. Cook sausages in the pan, breaking them up with a wooden spoon for 6 minutes until golden. Add kale and garlic, cook for 4 minutes until wilted. Pour in wine and tomato passata, bring to a simmer, and cook until liquid reduces by one-quarter, about 3 minutes.
  • Add the penne to boiling water and cook for about 8 minutes, stirring occasionally to prevent sticking. The pasta should be tender but still have a bite to it. Drain the pasta, but save some of the cooking water.
  • Mix the penne with the sauce, using some of the cooking water as needed to reach the desired consistency. Season with salt and pepper to taste. Top with cheese and serve promptly.
