Whole grain penne with sausage, mushroom and olive sauce

Whip up a quick and delicious sausage, mushroom, and olive pasta for a satisfying midweek meal in just 30 minutes.
Ingredients:
  • 350g Whole Grain Penne Rigate
  • 1 jar Olive Sauce
  • 1/2 onion, thinly sliced
  • 2 Italian style pork sausages, 1cm diced
  • 100g pancetta, cut into 0.5cm cubes
  • 100g swiss mushrooms, sliced
  • 80ml dry white wine
  • 80g Grana Padano cheese, grated
  • Extra virgin olive oil
  • Rock salt, for pasta water
  • Sea salt and pepper, to taste
Instructions:
  • In a large saucepan, bring an abundance of water to a rolling boil. Stir in 7 grams of rock salt per liter of water for best flavor.
  • Add the Barilla Whole Grain Penne Rigate to boiling water and stir. Cook according to package instructions.
  • In a large fry pan, heat a splash of oil over medium-high heat. Sauté onion and pancetta for 3 minutes. Add mushrooms and sausage, cook for an additional 3 minutes. Pour in the white wine and let it evaporate.
  • Pour in the flavorful Barilla Olive sauce and let it gently simmer to enhance the rich aromas.
  • Drain the pasta 2 minutes early, reserving a ladle of cooking water. Combine the pasta and water with the sauce in the saucepan to finish cooking together.
  • Top with a generous drizzle of Extra Virgin Olive oil and a light sprinkle of Grana Padano cheese before serving.
