Delicious whole wheat yogurt pancakes - a must try!
Ingredients:
  • 1 1/2 cups Gold Medal™ whole wheat flour
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs
  • 2/3 cup Yoplait® 99% Fat Free creamy vanilla or creamy strawberry yogurt (from 2-lb container)
  • 3/4 cup water
  • 3 tablespoons canola oil
  • 1 3/4 cups sliced fresh strawberries
  • 2/3 cup Yoplait® 99% Fat Free creamy strawberry yogurt (from 2-lb container)
Instructions:
  • Preheat a 12-inch skillet on a griddle to 375°F over medium-high heat. Grease with canola oil or cooking spray if needed.
  • Combine flour, sugar, baking powder, baking soda, and salt in a large bowl. In a medium bowl, whisk together eggs, 2/3 cup vanilla yogurt, water, and oil until smooth. Pour the egg mixture into the flour mixture and stir until just combined.
  • Pour a generous amount of batter onto the hot griddle for each pancake and cook until bubbly, puffed, and dry around the edges, about 1 to 2 minutes. Flip the pancake and continue cooking until both sides are golden brown, about 1 to 2 minutes each.
  • Place the 2 pancakes on each plate and generously top them with 1/4 cup of fresh sliced strawberries and a dollop of strawberry yogurt, about 1 to 2 tablespoons per pancake.
