Elevate your weekend breakfast with spelt flour and ground flaxseed, topped with your favorite berries for a special touch!
Ingredients:
  • 2 tablespoons canola oil
  • 1 cup buttermilk
  • 1 cup whole spelt flour
  • 3 tablespoons flax seed meal
  • 2 teaspoons baking powder
  • 2 teaspoons white sugar
  • 2 teaspoons canola oil, or as needed
  • 0.5 cup fresh blueberries
Instructions:
  • In a bowl, vigorously whisk together 1 egg and 2 tablespoons of canola oil. Add buttermilk and whisk until fully incorporated. In a separate bowl, combine flour, flax meal, baking powder, and sugar. Pour the milk mixture into the flour mixture and stir until well combined.
  • Heat 2 teaspoons of canola oil in a skillet over medium heat. Pour 1/4 cup of batter into the oil, add a handful of blueberries, and cook until pancakes are golden brown on both sides, about 3 to 4 minutes each. Repeat with the rest of the batter and blueberries.
