Fluffy whole grain spelt flour pancakes made with homemade buttermilk for a delicious and healthy breakfast.
Ingredients:
  • 0.75 cup milk
  • 1 tablespoon lemon juice
  • 1 large egg, beaten
  • 1 tablespoon melted butter
  • 1 cup spelt flour
  • 1 teaspoon baking powder
  • 0.75 teaspoon baking soda
  • 0.25 teaspoon salt
Instructions:
  • In a large bowl, mix milk and lemon juice and let it sit until it curdles, around 5 minutes. Add beaten egg and melted butter, and stir until well combined. Set aside.
  • In a medium bowl, whisk together spelt flour, sugar, baking powder, baking soda, and salt. Gradually fold the dry ingredients into the milk mixture until just combined - expect a slightly lumpy batter.
  • Preheat a greased griddle over medium-high heat. Spoon batter onto the griddle, cook until edges are dry and bubbles form, then flip and cook until browned. Repeat with remaining batter.
