  • 0.5 cup plain soy milk
  • 0.5 cup water
  • 0.25 cup vegan butter, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup spelt flour
  • 1 tablespoon white sugar
Instructions:
  • Combine soy milk, water, vegan butter, maple syrup, and vanilla extract in a bowl, blending until smooth.
  • Combine the spelt flour, sugar, and salt in a separate bowl. Gradually stir in the soy milk mixture until well incorporated.
  • Preheat a skillet over medium-high heat. Pour batter into the center of the skillet, swirling to cover the bottom completely. Cook until golden brown, roughly 2 minutes. Flip and cook for an additional minute.
