Simple Swedish pancake recipe served with lingonberries and powdered sugar.
Ingredients:
  • 4 eggs
  • 2 cups milk
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon vegetable oil, or as needed
Instructions:
  • In a large bowl, vigorously beat together eggs, milk, flour, sugar, 1 tablespoon of vegetable oil, and vanilla extract until the batter is smooth and thin.
  • Preheat a griddle or a Swedish plett pan over medium heat, then add about 1 teaspoon of oil. Pour a small amount of batter onto the griddle and swirl to spread it thinly; cook until lightly browned, around 2 to 3 minutes. Flip the pancake and cook until the other side is browned, another 2 to 3 minutes. Roll up the pancake and transfer to a plate. Repeat with the rest of the batter.
