Traditional Swedish Almond Spritz recipe passed down from ancestors, using real almonds for a delicious and unique cookie.
Ingredients:
  • 0.75 cup blanched slivered almonds
  • 1 cup butter, softened
  • 1 egg
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 0.125 teaspoon baking powder
Instructions:
  • Preheat your oven to 350°F (175°C) and spread almonds on a baking sheet. Bake for 10-15 minutes until lightly browned and aromatic. Allow to cool, then grind in a food processor until resembling rough sand. Make sure almonds are cool to avoid making almond butter.
  • Combine butter and sugar in a bowl until light and fluffy. Add the egg, almond extract, and milk. Mix in flour, baking powder, salt, and ground toasted almonds to make a soft dough. Chill the dough for 15-20 minutes to maintain cookie shape.
  • Prepare the cookie sheets by greasing them lightly. Load the cookie press with dough and press out cookies onto the sheets, spacing them at least 1 inch apart. Feel free to get creative with various cookie designs, such as the classic star shape preferred by many Swedish bakers, or any other shape you prefer.
  • Bake in the preheated oven for 8 to 10 minutes until cookies are lightly browned, then let them cool on the cookie sheets for a minute before transferring to a wire rack to cool completely.
