Juicy Swedish meatballs made with lean ground pork, ground beef, herbs, and bread crumbs, topped with a creamy dill sauce.
Ingredients:
  • 1 cup fresh bread crumbs
  • 0.75 cup milk
  • 1 pound lean ground beef
  • 0.5 pound lean ground pork
  • 0.5 cup finely chopped onion
  • 0.5 cup finely chopped fresh parsley
  • 0.25 cup finely chopped celery
  • 1 large egg, lightly beaten
  • 1 teaspoon minced garlic
  • 1 teaspoon white sugar
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup reduced-fat sour cream
  • 3 tablespoons chopped fresh dill
  • 0.25 teaspoon lemon zest
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and top it with a baking rack, spraying it with cooking spray.
  • In a large bowl, mix bread crumbs and milk, then let them soak for 10 minutes. Add ground beef, ground pork, onion, parsley, celery, egg, garlic, sugar, salt, and pepper; mix until combined (mixture will be wet). Shape into 36 meatballs using a 1-tablespoon cookie scoop and place on a baking rack.
  • Bake until a meatball reaches an internal temperature of 160 degrees F (71 degrees C, about 18 minutes.
  • While the meatballs bake, melt butter in a large saucepan over medium-low heat. Stir in flour and cook for 2 minutes. Gradually whisk in beef broth and Worcestershire sauce until smooth. Simmer, stirring often, until slightly thickened, about 12 minutes.
  • Take the meatballs out of the oven and transfer them to the sauce. Let simmer for 3 minutes, then stir in sour cream, dill, and lemon zest. Season with salt and pepper to taste before serving right away.
