Healthy spin on Swedish meatballs with Greek yogurt and a mix of ground sirloin and pork for a satisfying and delicious meal.
Ingredients:
  • 0.5 sweet onion, grated
  • 1 pound ground sirloin
  • 0.5 pound ground pork
  • 0.75 cup seasoned panko bread crumbs
  • 1 tablespoon milk
  • 1 teaspoon garlic powder
  • 0.5 teaspoon freshly ground black pepper
  • 4 dashes Worcestershire sauce, divided
  • 4.5 cups reduced-sodium beef broth, divided
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon finely chopped fresh rosemary
  • 0.25 cup cornstarch
  • 0.33333334326744 cup Greek yogurt
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Warm up the olive oil in a pan on medium-high heat. Cook the onion in the oil until it turns transparent, which should take about 5 to 7 minutes. Take the pan off the heat and allow the onion to cool down.
  • Mix together ground sirloin, ground pork, bread crumbs, onion, egg, milk, garlic powder, salt, pepper, and Worcestershire sauce to make flavorful meatball mixture. Shape into 1-inch meatballs and arrange on a baking sheet.
  • Cook in the preheated oven until the centers are no longer pink, approximately 20 minutes.
  • In a large skillet, combine 4 cups of beef broth, soy sauce, rosemary, and the rest of the Worcestershire sauce. Bring to a simmer.
  • Whisk cornstarch into the remaining beef broth. Add the mixture to the sauce and stir until it thickens. Stir in the meatballs and Greek yogurt. Garnish with parsley before serving.
