Easy, fluffy Swedish pancakes - a quick and delicious crepe-like breakfast treat with authentic flavors.
Ingredients:
  • 3 eggs
  • 1.25 cups milk
  • 0.75 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1 tablespoon butter, or as needed
Instructions:
  • Use an electric mixer to whip eggs until thick and pale, for about 3 to 5 minutes. Then, gently fold in the milk.
  • Combine the flour, sugar, and salt in a bowl. Gently fold into the egg mixture until the batter is smooth.
  • Prepare the griddle by greasing it lightly with butter and heating it over medium heat. Spoon tablespoonfuls of batter onto the griddle and spread them out to create thin pancakes. Cook each side until they are a light brown color, which should take about 1 to 2 minutes per side. Repeat this process with the rest of the batter until all the pancakes are cooked.
