Make Swedish rye bread with fresh seeds. Use rye flour for authentic flavor. Find gluten at gourmet or health food stores. Swap molasses for barley malt. Delicious!
Ingredients:
  • 1.3333330154419 cups boiling water
  • 1 teaspoon fennel seed
  • 1 teaspoon cumin seeds
  • 1 teaspoon caraway seed
  • 0.25 cup cracked wheat
  • 2.25 tablespoons butter
  • 2.25 tablespoons molasses
  • 1 tablespoon orange zest
  • 0.25 teaspoon baking soda
  • 1.5 cups rye flour
  • 1.5 cups bread flour
  • 2 teaspoons active dry yeast
  • 2 teaspoons gluten flour
  • 3 tablespoons powdered buttermilk
Instructions:
  • In a bowl, mix fennel seeds, cumin seeds, caraway seeds, cracked wheat, butter or margarine, molasses or barley malt, and orange zest with 1 1/3 cup of boiling water. Allow to soak for 1 hour to enhance flavors.
  • Combine seed mixture, baking soda, whole wheat or rye flour, high-gluten bread flour, dry yeast, gluten, and buttermilk powder in the bread machine pan following the manufacturer's instructions. Choose White Bread cycle and Light Crust setting to begin.
