Transform frozen baby lima beans with onions and chicken broth into a flavorful low-fat side dish.
Ingredients:
  • cooking spray
  • 0.5 medium onion, finely chopped
  • 1.5 cups chicken broth
  • 1 (16 ounce) package frozen baby lima beans
  • 1/4 cup water, or as needed to cover
Instructions:
  • Start by spraying a large saucepan with cooking spray and heating it over medium heat. Cook the onion in the pan until translucent, which should take about 5 minutes. Once the onion is ready, pour in the chicken broth and bring it to a boil.
  • Add in the lima beans and pour in just enough water to cover them. Bring to a boil, then lower the heat, cover, and simmer until the beans are tender, which should take around 30 minutes.
