Cauliflower and blue cheese potato mash

Elevate a classic with easy prep and delicious roasted cauliflower & blue cheese twist.
Ingredients:
  • 1kg Sebago potatoes, peeled, chopped
  • 40g butter, chopped
  • 125ml (1/2 cup) milk, warmed
  • Butter, extra, to serve
  • Cauliflower, small florets, roasted, to serve
  • Blue cheese, to serve
Instructions:
  • For creamy mashed potatoes, simmer the potato in cold water until tender. Drain, then return to the pan to dry out. Mash until smooth, gradually mixing in butter, milk, salt, and white pepper. Finish with a pat of extra butter on top. Enjoy!
  • Garnish with roasted cauliflower florets and sprinkle with blue cheese crumbles.
