Cauliflower and blue cheese macaroni

Elevate classic mac and cheese with a delicious twist using cauliflower and decadent blue cheese.
Ingredients:
  • 400g macaroni
  • 800g cauliflower, cut into small florets
  • 100g soft blue cheese, chopped
  • 250g Sour Cream
  • 20g pkt chives, chopped
  • 375.00 ml Shredded Mozzarella
  • 82.50 ml panko breadcrumbs
Instructions:
  • Prepare the macaroni according to the package instructions in a large saucepan of boiling salted water. Add the cauliflower for the final 5 minutes of cooking. Drain the pasta and cauliflower, saving 1/2 cup of the cooking liquid.
  • Add the macaroni and cauliflower back to the pan, along with blue cheese, sour cream, chives, 3/4 cup of mozzarella, and the reserved cooking liquid. Mix well to combine, season to taste, then transfer everything to a 6-cup heatproof dish.
  • Preheat the grill on high. Combine breadcrumbs and the rest of the mozzarella in a bowl, then sprinkle over the macaroni mixture. Drizzle with olive oil and grill for 2-3 minutes until golden and bubbly.
