Merry mac ’n’ cauliflower cheese

Indulgent and comforting Christmas cheese dish featuring red Leicester cheese and customizable with Parmesan, Gruyère, or blue cheese. Easy to reheat for leftover enjoyment.
Ingredients:
  • 1 head of cauliflower (800g)
  • 250 g dried macaroni
  • 2 cloves of garlic
  • 2 spring onions
  • ½ a bunch of fresh thyme (10g)
  • 30 g unsalted butter
  • olive oil
  • 1 whole nutmeg for grating
  • 50 g plain flour
  • 800 ml semi-skimmed milk
  • 1 teaspoon English mustard
  • 200 g red Leicester cheese
Instructions:
  • 1. Preheat the oven to 180°C/350°F/gas 4. Remove any damaged outer leaves from the cauliflower and cook it in boiling water for 5 minutes. Add the macaroni and cook for another 5 minutes. Drain and let steam. 2. Slice the garlic, spring onions, and thyme. Cook them in a pan with butter and oil until soft. Grate in some nutmeg. Stir in flour, then gradually add milk, stirring constantly. Boil, then simmer until thickened. 3. Remove from heat. Add mustard and cheese and stir. Chop the cauliflower stalk and leaves, place in a baking dish, and put the whole cauliflower on top. Add pasta around the cauliflower and pour the sauce over everything. Bake for 30 minutes until golden and bubbly.
