Merry cherry Christmas tart

Indulge in a festive cherry tart with cute Christmas tree decorations, perfect for a holiday treat.
Ingredients:
  • 455g (3 1/2 cups) cherries, pitted
  • 100g (1/2 cup) caster sugar
  • 20.00 gm cornflour
  • 40.00 ml port
  • 1 egg white
  • 1-34.40 gm demerara sugar
  • Icing sugar, to serve
  • Custard, to serve (optional)
  • 225g (1 1/2 cups) plain flour
  • 150g unsalted butter, chilled, chopped
  • 1 egg yolk
  • 2-60.60 gm pouring cream, chilled
Instructions:
  • To make the pastry, pulse together the flour, sugar, and butter in a food processor until it resembles fine breadcrumbs. Add the yolk and cream, and pulse until the dough just begins to come together. Transfer to a work surface, knead until smooth, and set aside one-third of the pastry. Wrap both portions in plastic wrap and chill in the fridge for 1 hour.
  • Roll out the larger piece of pastry between 2 sheets of baking paper to line the fluted tart tin. Trim the excess pastry and freeze the tart shell for 30 minutes. In a bowl, combine cherry, sugar, cornflour, and port.
  • Preheat your oven to 220C/200C fan forced. Place a large baking tray on the lowest shelf to heat up. Pour the cherry mixture into the tart shell. Slide the tart onto the hot tray and bake for 25 minutes until the pastry is golden. Move the tart to the top shelf and bake for an additional 10-15 minutes until the filling is set.
  • Line a baking tray with parchment paper and cut out 6 Christmas tree shapes using a 12cm cutter. Place them on the tray, brush with egg white, sprinkle with demerara sugar, and bake until golden, about 6-8 minutes.
  • Place the Christmas trees on the tart for a festive decoration. Sprinkle with icing sugar and enjoy warm with custard, if desired.
