Flavorful Italian vegetable and bean soup, perfect for prepping ahead and reheating.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, finely chopped
  • 1 medium onion, chopped (1/2 cup)
  • 4 cups chicken broth or water
  • 4 cups tomato juice
  • 1 cup dry red wine or water
  • 1 tablespoon dried basil leaves
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon pepper
  • 2 small zucchini, chopped (2 cups)
  • 2 medium carrots, sliced (1 cup)
  • 2 medium stalks celery, chopped (1 cup)
  • 1 can (28 ounces) diced tomatoes, undrained
  • 2 cans (15 to 16 ounces each) kidney, garbanzo or great northern beans, rinsed and drained
Instructions:
  • In an 8-quart Dutch oven, heat oil over medium heat. Sauté garlic and onion for about 2 minutes, stirring occasionally, until onion is tender.
  • Add the rest of the ingredients to the pot. Bring to a boil, then lower the heat. Cover and let it simmer for 1 hour.
