Tender homemade meatballs paired with zesty store-bought salsa for a quick and flavorful meal.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 medium onion, chopped (1/2 cup)
  • 1/3 cup Progresso™ plain bread crumbs
  • 1/4 cup milk
  • 1/8 teaspoon pepper
  • 1 1/2 cups thick & chunky salsa
  • 2 medium green onions, thinly sliced (2 tablespoons), if desired
Instructions:
  • Preheat your oven to 400°F. Combine all ingredients, excluding salsa and green onions, in a medium bowl. Form the mixture into thirty 1-inch balls and arrange them in a 13x9-inch pan without greasing it.
  • Bake uncovered for about 15 minutes until the center is no longer pink and a thermometer inserted reads 160°F.
  • In a 2-quart saucepan, bring the salsa and meatballs to a simmer, stirring occasionally. Cover and cook for about 15 minutes until hot. Top with green onions and serve while hot.
