Elevate classic cauliflower bake with creamy blue cheese and flavorful leeks.
Ingredients:
  • 1 large cauliflower, cut into florets
  • 3 bacon rashers, finely chopped
  • 1 leek, pale section only, thinly sliced
  • 150g blue cheese, coarsely chopped
  • 50g butter
  • 35g plain flour
  • 500ml milk
  • 60g cheddar cheese
Instructions:
  • Preheat the oven to 200°C. Boil the cauliflower in a saucepan for 5 minutes until tender. Drain and place in a 6-cup (1.5L) ovenproof dish.
  • - Preheat a frying pan over medium heat. Cook the bacon and leek, stirring occasionally, for 5 minutes until the leek softens and the bacon is lightly golden. Spread the leek and bacon over the cauliflower in the dish and sprinkle with half of the blue cheese.
  • In a saucepan over medium-high heat, melt the butter. Add the flour and cook for 2 minutes until the mixture bubbles and thickens slightly. Pour in the milk and whisk until smooth. Cook for 5-6 minutes, stirring constantly until the sauce boils and thickens. Remove from heat and stir in the cheddar and remaining blue cheese until melted and smooth. Season to taste. Pour the hot sauce evenly over the cauliflower mixture in the dish.
  • Bake until the cauliflower mixture is golden brown and heated through, about 15 minutes. Serve hot.
