Creamy, garlicky cauliflower and leek soup - a carb-conscious vegetarian delight without potato.
Ingredients:
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 3 leeks, cut into 1 inch pieces
  • 1 large head cauliflower, chopped
  • 3 cloves garlic, finely chopped
  • 8 cups vegetable broth
  • 1 cup heavy cream
Instructions:
  • In a large pot over medium heat, melt butter with olive oil. Sauté leeks, cauliflower, and garlic for 10 minutes. Pour in vegetable broth, bring to a boil, then simmer covered for 45 minutes.
  • Take the soup off the heat and use an immersion blender to blend until smooth. Season with salt and pepper, pour in heavy cream, and blend until silky.
