Stuffed Peppers with Frozen Cauliflower Rice

Low-carb cauliflower rice stuffed bell peppers with flavorful ground beef, mushrooms, and savory seasonings.
Ingredients:
  • 6 medium bell peppers
  • 1 (10 ounce) package frozen riced cauliflower
  • 1 teaspoon olive oil
  • 1 pound 93% lean ground beef
  • 1 (8 ounce) package cremini mushrooms, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 0.5 medium yellow onion, diced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (6 ounce) can tomato paste
  • 5 leaves fresh basil, chopped
Instructions:
  • Prepare the peppers by cutting off the tops and placing them on a microwave-safe plate. Remove and discard the stems from the tops. Dice the flesh from the tops, setting aside 1/2 of the diced peppers for this recipe and saving the rest for later use.
  • Partially cook peppers in the microwave on high for 3 minutes.
  • Microwave the frozen riced cauliflower in a microwave-safe bowl on high for 4 minutes, remembering to stir halfway through.
  • In a large nonstick skillet over medium-high heat, heat olive oil for about 1 minute until hot. Add beef, mushrooms, carrots, celery, onion, and diced peppers. Sauté until onions are translucent and beef is almost cooked, roughly 5 minutes. Sprinkle in Italian seasoning, red pepper flakes, oregano, salt, and pepper, and cook for another minute. Mix in cooked riced cauliflower and garlic. Stir well and continue cooking until beef is browned and crumbly, about 2 to 3 minutes, breaking up any chunks with a spoon.
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine drained tomatoes, tomato paste, and fragrant fresh basil in the skillet, cooking until most liquid is absorbed, approximately 5 minutes. Remove from heat and let the savory beef mixture cool for about 5 minutes.
  • Evenly fill the peppers with the flavorful beef mixture and place them upright in a baking dish.
  • Cook until the peppers are tender and the filling is hot, approximately 30 minutes in the preheated oven.
