Elevate stuffed peppers with a pizza twist. This family-friendly recipe is simple to prepare and perfect for meal prep.
Ingredients:
  • 1 cup cooked (1/2 cup dry) white rice
  • 3 red or green bell peppers
  • 1 tablespoon olive oil or unsalted butter
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 pound lean ground beef (90/10)
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/4 cups pizza or marinara sauce, divided
  • 1 1/2 teaspoons Italian seasoning
  • 9 slices pepperoni, cut into quarters, or about 36 mini pepperoni
  • 1 cup shredded mozzarella cheese
  • Chopped fresh basil, optional, for serving
Instructions:
  • Prepare flavorful rice by cooking it until fluffy and tender, if needed.
  • Preheat your oven to 425°F.
  • Prepare the peppers by washing and halving them lengthwise. Remove the membrane and seeds from each half.
  • Prepare the filling: In a large 12-inch skillet over medium-high heat, melt the butter or heat the oil. Sauté the onion and garlic until soft and translucent, around 5 minutes. Add the ground beef, breaking it up with a wooden spoon, and cook until fully browned. Season with salt and pepper during cooking. If preferred, you can drain off any extra grease. Take the skillet off the heat and mix in half of the sauce, the cooked rice, and Italian seasoning.
  • Fill the peppers generously with the ground beef mixture, placing them open-side up in a baking dish spread with the remaining sauce.
  • - Preheat the oven and bake the peppers: Seal the baking dish with foil and bake for 25 minutes. Uncover and add pepperoni and mozzarella on top of each pepper. Bake for another 8-10 minutes until cheese melts. Serve warm, optionally garnished with basil. Refrigerate leftovers in an airtight container for up to 4 days.
