Easy Beef Enchiladas

Quick and flavorful ground beef enchiladas made with just 6 ingredients. Ready in 20 minutes, perfect for a relaxing dinner with a margarita on the side!
Ingredients:
  • 1 lb ground beef (at least 80% lean)
  • 1 cup chopped onions
  • 1 medium red bell pepper, chopped (1 cup)
  • 2 cans (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1 1/2 cups shredded cheddar Jack cheese (6 oz)
Instructions:
  • Preheat your oven to 375°F and generously coat a 13x9-inch (3-quart) baking dish or pan with cooking spray.
  • In a large nonstick skillet, sauté beef, onions, and bell pepper over medium-high heat for 8 to 10 minutes until fully cooked; remember to stir occasionally. Drain any excess fat. Add 1 cup of enchilada sauce and the chiles, bring to a simmer, and then remove from the heat.
  • Pour half of the enchilada sauce into the baking dish, making sure it covers the bottom evenly. Spoon about 1/2 cup of the beef mixture down the center of each tortilla, then sprinkle each with 2 tablespoons of cheese. Roll up the tortillas tightly, placing them seam side down in the baking dish. Pour the rest of the enchilada sauce over the top, then sprinkle the remaining cheese on top.
  • Bake for 23 to 27 minutes until hot and bubbly, ensuring the center reaches at least 165°F. Allow to rest for 5 minutes before serving.
