Quick and easy beef enchiladas: Seasoned beef and onions wrapped in tortillas, topped with melted cheese and baked to perfection.
Ingredients:
  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 1 (1.5 ounce) package dry enchilada sauce mix
  • 10 (10 inch) flour tortillas
  • 2 cups shredded Cheddar cheese, divided
  • 1 (2.25 ounce) can sliced black olives, drained
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Brown ground beef with onions in a skillet over medium-high heat until beef is cooked through and onions are soft.
  • Make the enchilada sauce following the package instructions. Pour 1/4 cup of the sauce into a 9x13-inch baking dish.
  • Distribute the ground beef mixture evenly on each flour tortilla, add about 1 ounce of Cheddar cheese on top, and save at least 1/2 cup of cheese for later. Roll the tortillas up tightly.
  • Arrange the rolled tortillas in the baking dish with the seam side facing down.
  • Drizzle the rest of the sauce over the enchiladas and top them off with the remaining cheese and olives for a flavorful finish.
  • Bake until the sauce is bubbling and the cheese is completely melted, around 20 minutes in the preheated oven.
  • Sprinkle with a generous amount of your preferred garnish and pair with a side dish of your choice. Bon appétit!
