Easy beef enchiladas with creamy filling of ground beef, Cheddar, beans, and olives in flour tortillas.
Ingredients:
  • 2 pounds ground beef
  • 0.25 medium onion, finely chopped
  • 1.25 cups shredded Cheddar cheese, divided
  • 0.5 cup sour cream
  • 1 tablespoon dried parsley
  • 1 tablespoon taco seasoning
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground black pepper
  • 2.5 cups enchilada sauce
  • 1.5 teaspoons chili powder
  • 1 clove garlic, minced
  • 0.5 teaspoon salt
  • 8 flour tortillas
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (4 ounce) can sliced black olives, drained
Instructions:
  • Prep your ingredients and preheat oven to 350°F (175°C).
  • In a large skillet over medium-high heat, sauté the ground beef and onion until the beef is browned and crumbly, about 5-7 minutes. Remove and discard excess grease.
  • Combine 1 cup Cheddar cheese, sour cream, parsley, taco seasoning, oregano, and black pepper with ground beef until the cheese is melted. Add enchilada sauce, chili powder, garlic, and salt. Bring to a boil, then simmer on low heat until the sauce slightly thickens, approximately 5 minutes.
  • Place a tortilla on a flat surface and spread approximately 1/4 cup of meat sauce in the middle of the tortilla. Add 1 tablespoon of black beans and a sprinkle of black olives on top of the meat sauce. Roll up the tortilla to contain the filling and place it seam-side down in a 9x13-inch baking dish. Repeat the process with the rest of the tortillas.
  • Cover the rolled tortillas with the remaining meat sauce, then top them with any leftover black beans and black olives. Finish by sprinkling the remaining 1/4 cup of Cheddar cheese on top.
  • Bake until the cheese melts and the sauce bubbles, approximately 20-22 minutes. Allow it to stand for 5 minutes before serving.
  • Serve the dish piping hot and savor every delicious bite!
