Creamy Beef Enchiladas

Creamy beef enchiladas with a surprise twist of cream cheese. Melt-in-your-mouth perfection.
Ingredients:
  • 1.5 pounds ground beef
  • 1 (1 ounce) packet taco seasoning mix
  • 0.5 cup chopped sweet onion
  • 4 green onions, or to taste, chopped
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup chunky salsa
  • 12 corn tortillas, warmed
  • 1 cup shredded pepper Jack cheese
  • 2.5 cups enchilada sauce
  • 1 (4 ounce) can sliced black olives, drained
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • 1. Preheat a nonstick skillet over medium-high heat. Brown the ground beef until crumbly, stirring occasionally for 5 to 7 minutes. Mix in the seasoning until well combined. Transfer the beef to a bowl, keeping the drippings in the skillet.
  • Cook sweet and green onions in the flavorful pan drippings over medium heat until tender, approximately 5 to 7 minutes, stirring occasionally.
  • Combine the onions with the beef mixture, cream cheese, and salsa; stir until the cream cheese is fully melted.
  • Lay out tortillas on a spacious work surface. Divide beef mixture evenly among tortillas, placing it in the center of each. Sprinkle 1 tablespoon pepper Jack cheese on each tortilla, then roll them up. Place the rolled tortillas in a baking dish, pour enchilada sauce over them, and top with olives and remaining cheese.
  • Bake until the cheese is completely melted, approximately 20 minutes in the preheated oven.
