Cheesy beef-stuffed tortillas in creamy soup sauce is a crowd-pleaser. Serve with Mexican rice and impress your guests.
Ingredients:
  • 1.5 pounds lean ground beef
  • 1 bunch green onions, finely chopped
  • 1 diced fresh jalapeno pepper, or to taste
  • 0.25 cup water
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 cup plain yogurt
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 2 cups shredded mozzarella cheese
  • 6 (6 inch) corn tortillas
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a large skillet, sauté ground beef with green onion and jalapeno until beef is browned. Stir in water and taco seasoning, simmer until liquid evaporates.
  • Combine velvety yogurt, rich condensed soup, and melty cheese in a medium bowl.
  • Evenly distribute the meat mixture among the tortillas, then sprinkle a generous amount of the cheese mixture on top. Roll up the tortillas and place them in a 7x11 inch baking dish. Finish by spooning the remaining cheese mixture over the top of the tortillas.
  • Simply bake in a preheated oven for 20-30 minutes.
