Savory beef enchiladas with zesty chiles and melted cheese - a hit at any gathering, loved by kids, and a breeze to whip up!
Ingredients:
  • 2 pounds ground beef
  • 1 onion, chopped
  • 2 (4 ounce) cans chopped green chilies
  • 1 (1 ounce) package taco seasoning
  • 1 (16 ounce) container sour cream
  • 2 (10.5 ounce) cans cream of chicken soup
  • 12 flour tortillas
  • 2 cups shredded Cheddar cheese
  • 1 small tomato, chopped
  • 1.5 cups shredded lettuce
  • 0.25 cup black olives, sliced
Instructions:
  • Preheat oven to 350°F (175°C) to ensure perfect baking results.
  • In a large skillet over medium-high heat, brown ground beef with onion, 1 can of green chiles, and taco seasoning for 6 to 8 minutes, stirring regularly. Remove excess fat after browning.
  • Combine sour cream, cream of chicken soup, and 1 can of green chiles in a saucepan and heat gently over medium-low heat for approximately 10 minutes until warmed through.
  • Spread a generous layer of half the warmed sour cream mixture in a 9x13-inch baking dish.
  • Place a generous amount of the ground beef mixture in the center of each tortilla. Roll up the tortillas and nestle them on the bed of creamy sour cream in the 9x13-inch baking dish. Cover the rolled tortillas with the remaining sour cream mixture, then generously sprinkle Cheddar cheese on top.
  • Bake until hot and bubbly, around 35 minutes in the preheated oven.
  • Garnish enchiladas with crisp lettuce, juicy tomatoes, and savory olives.
