Ingredients:
  • 1 cup mashed potatoes
  • 1 cup reserved potato water
  • 0.75 cup butter OR margarine
  • 0.75 cup sugar
  • 2 teaspoons salt
  • 1 cup hot water
  • 2 envelopes Fleischmann's® Active Dry Yeast
  • 0.5 cup warm water (100 to 110 degrees F)
  • 2 eggs
  • 8.5 cups all-purpose flour, or more if needed
  • 0.5 cup butter OR margarine, softened
  • 1 cup sugar
  • 1.5 teaspoons Spice Islands® Ground Saigon Cinnamon
  • 3 cups powdered sugar
  • 6 tablespoons butter OR margarine, softened
  • 1 teaspoon Spice Islands® 100% Pure Bourbon Vanilla Extract
  • 5 tablespoons milk, or more as needed
Instructions:
  • Mix together boiled potatoes, reserved potato water, butter, sugar, salt, and hot water in a large mixing bowl. Stir until the butter is melted and set aside to cool. In a small bowl, mix yeast with 1/2 cup warm water and let sit for 5 minutes. Add eggs, 2 cups of flour, and the yeast mixture to the potato mixture. Beat until thoroughly combined. Gradually add flour, 1 cup at a time, until a soft dough forms.
  • Knead on a lightly floured surface or with an electric mixer until smooth and elastic (4 to 6 minutes). Place the dough in a greased bowl, turning to coat, and cover.
  • Allow the dough to rise in a cozy, draft-free spot for approximately 1 hour until it doubles in size. Then, deflate the dough by punching it down and dividing it in half.
  • On a lightly floured surface, roll out one portion of dough to a 12 x 18-inch rectangle. Spread with half of the butter, then sprinkle half of the sugar and cinnamon mixture over the surface. Roll up the dough tightly lengthwise, sealing the edges. Cut the roll into 12 slices and place them in a greased 13 x 9-inch pan. Repeat the process with the remaining dough and ingredients, then cover the pan.
  • Allow the dough to rise for 30 to 45 minutes until it has almost doubled in size.
  • Place in a warm 350 degrees F oven and bake for 25 to 30 minutes.
  • Allow the rolls to cool for 15 minutes, then mix the icing ingredients together and generously drizzle over the rolls.
