Kid-friendly squash cinnamon rolls: a delicious twist on classic cinnamon rolls using winter squash.
Ingredients:
  • 1.5 cups cubed winter squash
  • water to cover
  • 0.5 cup warm water (110 degrees F/45 degrees C)
  • 2 (.25 ounce) packages active dry yeast
  • 5 cups white whole wheat flour
  • 0.5 cup white sugar
  • 2 teaspoons salt
  • 1 cup milk
  • 0.5 cup butter, softened
  • 0.33333334326744 cup butter, softened
  • 1 cup brown sugar
  • 2.5 tablespoons ground cinnamon
  • 1.5 cups confectioners' sugar
  • 0.25 cup butter, softened
  • 1 (3 ounce) package cream cheese, softened
  • 0.5 teaspoon vanilla extract
Instructions:
  • Place the squash in a saucepan and cover with water. Bring to a boil and cook until tender for approximately 15 minutes. Drain the water, let the squash cool, and then mash it using a potato masher or fork.
  • In a bowl, gently pour warm water and sprinkle in the yeast. Allow the mixture to sit until the yeast softens and a creamy foam forms, approximately 5 minutes.
  • In a large bowl, mix together flour, white sugar, and salt. Add in yeast mixture, mashed squash, milk, and 1/2 cup of butter. Stir until dough begins to come together. Transfer the dough to a lightly floured surface and knead until smooth.
  • Transfer the dough to a lightly oiled bowl, ensuring all sides are coated. Cover the bowl with a damp cloth and allow the dough to rise in a warm place until it doubles in size, approximately 1 hour.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and give a gentle grease to a 9x13-inch baking dish.
  • Flatten dough into a 16x21-inch rectangle. Spread 1/3 cup butter on top. Combine brown sugar and cinnamon, then sprinkle over the butter. Roll dough with filling and slice into 12 to 15 rolls. Arrange in baking dish and let rise for around 30 minutes until nearly doubled.
  • Bake until beautifully golden brown in the preheated oven for around 15 minutes.
  • Using an electric mixer, blend 1/4 cup butter, cream cheese, confectioners' sugar, and vanilla extract together in a bowl until you achieve a smooth frosting. Spread this delightful frosting onto your warm rolls.
