Creamy Butternut Squash With Cinnamon Soup

"Autumnal soup spiced with cinnamon, ginger, and cloves, garnished with crispy apple chips."
Ingredients:
  • 1.5 pounds peeled and seeded butternut squash , cut into 1-inch chunks
  • 1 large onion, cut into large dice
  • 1 pinch sugar
  • 3 large garlic cloves, thickly sliced
  • 1.5 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 0.125 teaspoon cayenne pepper
  • 3 cups chicken broth, homemade or from a carton or can
  • 1.5 cups half-and-half (or whole milk)
  • Salt and freshly ground pepper, to taste
  • Garnish: store-bought apple chips
Instructions:
  • Heat oil in a large, deep saute pan over medium-high heat until it shimmers.
  • Saute butternut squash and onion, allowing them to caramelize gently at first before stirring occasionally until squash begins to turn golden brown, for about 7 to 8 minutes.
  • Lower the heat and incorporate butter, sugar, and garlic into the mixture. Cook until the vegetables develop a rich caramel color with golden spots, approximately for another 10 minutes.
  • Sprinkle in cinnamon, ginger, cloves, and cayenne pepper; saute until fragrant, about 30 seconds to 1 minute more.
  • Pour in the broth and bring it to a gentle simmer over medium-high heat. Lower the heat and simmer with the pot slightly covered until the squash is soft, approximately 10 minutes.
  • Blend the mixture until velvety smooth for about 30 seconds to 1 minute using an immersion or traditional blender. If using a traditional blender, vent it by either removing the lid's center or lifting one edge of the lid. Drape the canister with a kitchen towel. To clean the canister, add a splash of half-and-half, blend briefly, then incorporate into the soup.
  • Return the mixture to the pan (or a soup pot) and pour in just the right amount of half-and-half until it reaches a souplike consistency, still thick enough to support the garnish. Taste and season with salt and pepper as necessary. Heat it up, then carefully pour into bowls, add the garnish, and serve.
