Cozy winter night delight: Butternut squash soup with ginger and quinoa.
Ingredients:
  • 1 onion, chopped
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 4 cups chicken broth
  • 1 butternut squash - peeled, seeded, and cubed
  • 1 (1 inch) piece fresh ginger, peeled and grated
  • 1 teaspoon ground cumin
  • 1 cup quinoa
Instructions:
  • In a skillet over medium heat, melt 1 tablespoon butter with olive oil. Sauté onion until softened, 5 to 10 minutes. Add chicken broth, butternut squash, ginger, and cumin. Simmer until squash is very soft, about 20 minutes.
  • Transfer the squash mixture into a blender, filling it no more than half full. Cover securely and pulse a few times before blending until smooth in batches. Season the soup with salt and pepper to taste.
  • In a saucepan, bring salted water and quinoa to a boil. Cover and simmer on medium-low heat for 15 to 20 minutes until quinoa is tender and water is absorbed. Stir in 1 tablespoon of butter, season with salt, and spoon into soup.
