Oven-roasted acorn squash glazed with honey and cinnamon, topped with blue cheese and almonds. Easy and delicious!
Ingredients:
  • 1 acorn squash - halved lengthwise, seeded, and cut into 3/4-inch slices
  • 0.125 teaspoon ground black pepper
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1 ounce crumbled blue cheese
  • 2 green onions, thinly sliced
  • 12 smoked almonds, chopped
Instructions:
  • Preheat the oven to a piping hot 450 degrees F (230 degrees C), then line a baking sheet with foil and give it a quick spray of nonstick cooking spray.
  • Combine acorn squash slices with luxurious olive oil, a pinch of salt, and a dash of pepper in a spacious bowl, ensuring every slice is perfectly coated. Transfer slices onto a baking sheet in a uniform layer, then generously drizzle with golden honey and a hint of fragrant cinnamon.
  • Place in the preheated oven for 20 minutes. Gently flip each slice. Bake until tender and golden brown, approximately 10 more minutes. Transfer to a serving plate and garnish with blue cheese, green onions, and sliced almonds.
