Roasted honey chicken thighs with baby potatoes, apple, shallots, and thyme - a flavorful one-pan meal, crispy and juicy.
Ingredients:
  • 1/4 cup plus 2 tablespoons olive oil, divided
  • 1/3 cup honey
  • 1 lemon, juiced (about 2 tablespoons)
  • 2 medium cloves garlic, grated
  • 1 tablespoon chopped fresh thyme (about 15 sprigs)
  • 6 medium bone-in, skin-on chicken thighs (about 2 1/4 pounds)
  • 1 1/2 pounds baby potatoes (gold or red), halved
  • 2 teaspoons kosher salt, or to taste
  • 1 teaspoon freshly cracked black pepper, or to taste
  • 3 medium shallots, peeled, halved, and cut into 1/4-inch slices
  • 2 medium apples (such as Honeycrisp or Gala), cored and cut into 1/4-inch slices
Instructions:
  • Preheat the oven to 425°F with a rack in the center.
  • Prepare the chicken marinade by combining 1/4 cup olive oil with honey, lemon juice, garlic, and thyme in a medium bowl. Add the chicken thighs and mix well. Allow the chicken to marinate for at least 15 minutes at room temperature or refrigerate for up to 8 hours.
  • Achieve perfect potatoes: Toss potatoes with 2 tablespoons of olive oil on a baking sheet. Season with salt and pepper. Roast for 25 minutes until golden brown and tender.
  • Combine the rest of the ingredients: Take the potatoes out of the oven and scatter the shallot and apple slices around them. Transfer the chicken from the marinade and position it skin side down over the potato and apple mix. Season the undersides of the thighs with salt and pepper, then flip them skin side up and season the top with salt and pepper. Drizzle any extra marinade over the chicken, apples, and shallots, gently tossing to coat, making sure the chicken remains skin side up on top. Season the shallots and apples with salt and pepper.
  • Continue roasting: Place the pan back in the oven and roast until the chicken reaches an internal temperature of 165°F, the skin is golden brown, and the apples and shallots have softened slightly, for 30 to 35 more minutes.
