Ingredients:
  • 1 (6 pound) whole roasting chicken
  • 0.5 cup honey
  • 1 tablespoon chili powder
  • 1.5 teaspoons ground cumin
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons butter, melted
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) while gently rinsing and thoroughly patting dry the chicken before placing it in the roasting pan.
  • Combine honey, chili powder, cumin, cayenne pepper, salt, and garlic powder in a bowl. Massage the honey seasoning onto the chicken, then drizzle with melted butter.
  • Roast the chicken in the oven until the skin turns golden brown, about 30 to 45 minutes, occasionally basting it with the pan juices.
  • Lower the oven temperature to 350 degrees F (175 degrees C. Roast the chicken until no longer pink at the bone and the juices run clear, basting occasionally, for 1 1/2 to 2 hours. Use an instant-read thermometer to ensure the thickest part of the thigh reads 180 degrees F (80 degrees C). Remove the chicken from the oven, cover with foil, and let it rest in a warm area for 10 minutes before slicing.
