Easy squash rings coated in seasoned bread crumbs, baked to perfection in one hour.
Ingredients:
  • 2 tablespoons packed brown sugar
  • 2 tablespoons milk
  • 1 egg
  • 3/4 cup soft bread crumbs (about 1 slice bread)
  • 1/4 cup cornmeal
  • 2 teaspoons ground cinnamon
  • 1 medium acorn squash (1 1/2 pounds), cut crosswise into 1/2-inch slices and seeded
  • 1/3 cup margarine or butter, melted
Instructions:
  • Preheat the oven to 400°. Combine brown sugar, milk, and egg in a bowl. In another bowl, mix bread crumbs, cornmeal, and cinnamon. Dip squash slices into the egg mixture, then coat them with the bread crumb mixture.
  • Spread the squash evenly in a 13x9x2-inch rectangular pan. Generously drizzle with melted butter. Bake uncovered for 30 to 35 minutes until the squash is tender.
