Beef Enchiladas with Homemade Sauce

Delicious beef and black bean enchiladas with flavorful homemade sauce - perfect for any occasion!
Ingredients:
  • 3 tablespoons vegetable oil
  • 1 tablespoon all-purpose flour
  • 2 tablespoons chili powder, or more to taste
  • 2 cups chicken stock
  • 1 (6 ounce) can tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • cooking spray
  • 1 pound ground beef
  • 1 teaspoon extra-virgin olive oil
  • 1 onion, diced
  • 2 (4 ounce) cans fire-roasted diced green chiles
  • 0.5 green bell pepper, diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 8 low-carb high-fiber tortillas (such as La Tortilla Factory®)
  • 1 (8 ounce) package shredded low-fat Mexican cheese blend
Instructions:
  • Begin by heating vegetable oil in a saucepan over medium heat. Add the flour and stir with a wooden spoon until smooth, for about 1 to 2 minutes. Add chili powder and cook until fragrant, around 30 seconds. Then pour in the chicken stock, mix in the tomato paste, oregano, cumin, and salt. Bring the mixture to a boil. Lower the heat and let the enchilada sauce simmer until thickened and smooth, approximately 15 minutes.
  • Preheat the oven to 375°F (190°C) and generously coat a 9x13-inch baking dish with cooking spray.
  • Preheat a large skillet over medium-high heat. Sear and stir beef until perfectly browned and crumbly, about 5 to 7 minutes; remove and discard any excess grease.
  • In a skillet over medium heat, sauté onion, green chiles, and green bell pepper in olive oil until softened, about 5-10 minutes. Add ground beef and black beans. Pour in half of the enchilada sauce and cook for 1-2 minutes, stirring constantly.
  • Evenly distribute the beef mixture in the center of each tortilla, then roll them around the filling. Arrange the tortillas seam-side down in the baking dish. Top with the remaining enchilada sauce and Mexican cheese blend.
  • Bake until the cheese is gooey and bubbly, for around 20 minutes in the preheated oven.
