Elevate stuffed peppers with zesty homemade Creole sauce for a flavorful twist.
Ingredients:
  • 0.5 cup finely chopped onion
  • 0.5 cup finely chopped green bell pepper
  • 1 (8 ounce) can tomato sauce
  • 1 (15 ounce) can crushed tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon white sugar
  • 0.25 teaspoon ground black pepper
  • 0.125 teaspoon ground clove
  • 1 bay leaf
  • 4 large green bell peppers, tops removed, seeded
  • 1 pound ground beef
  • 0.25 cup minced onion
  • 0.33333334326744 cup finely chopped celery
  • 1.5 cups cold, cooked white rice
  • 0.25 cup grated Parmesan cheese
  • salt and pepper to taste
Instructions:
  • In a saucepan over medium heat, warm olive oil, then sauté 1/2 cup onion and garlic until onion turns translucent, which takes about 5 minutes. Add in chopped bell pepper, tomato sauce, crushed tomatoes, and season with salt, chili powder, sugar, black pepper, ground clove, and a bay leaf. Let it simmer, covered, over medium-low heat for 20 minutes, stirring occasionally.
  • Microwave the peppers until tender, about 45 seconds while the sauce is simmering. Preheat a skillet over medium-high heat and brown the ground beef until crumbly. Stir in 1/4 cup onion and celery, and cook for 5 more minutes. Drain grease and fold in rice and Parmesan cheese. Season with salt and pepper to taste.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Mix 1/2 cup of the flavorful Creole sauce into the beef, then fill the peppers with the tasty mixture and arrange them in a 9x9 inch baking pan. Drizzle the remaining Creole sauce over the peppers.
  • Roast the peppers uncovered in the oven until they are hot and starting to brown, which should take about 25 minutes.
