Mouthwatering Italian stuffed peppers with savory bread stuffing and aromatic ingredients baked to perfection.
Ingredients:
  • 4 green bell peppers, halved and seeded
  • 1 (1 pound) loaf stale Italian bread, crumbled
  • 0.5 cup water, or more as needed
  • 1 (2 ounce) can anchovy fillets, chopped
  • 8 pitted green olives, chopped
  • 0.5 teaspoon crushed red pepper flakes
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a large baking dish.
  • Place bell peppers in the baking dish with the cut side facing up; set aside.
  • In a large bowl, combine crumbled bread with 1/2 cup of water; let it rest.
  • In a large, heavy skillet, warm olive oil over low heat. Sauté onion until translucent. Add garlic and cook for 2 minutes. Combine moistened bread, anchovy fillets, olives, extra-virgin olive oil, black pepper, and red pepper flakes; mix until stuffing is thoroughly blended.
  • Fill the pepper halves generously with the stuffing. Place the peppers snugly in a pool of tomato sauce and a splash of water in a baking dish. Cover the dish tightly with foil.
  • Roast in the oven until peppers are tender, 45-60 minutes, uncover for the final 15 minutes, basting occasionally with sauce.
