Savory ground turkey and fresh vegetables stuffed inside colorful bell peppers for a flavorful and satisfying dish.
Ingredients:
  • 4 green bell peppers, tops removed, seeded
  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 0.5 onion, chopped
  • 1 cup sliced mushrooms
  • 1 zucchini, chopped
  • 0.5 red bell pepper, chopped
  • 0.5 yellow bell pepper, chopped
  • 1 cup fresh spinach
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 tablespoon tomato paste
  • Italian seasoning to taste
  • garlic powder to taste
  • salt and pepper to taste
Instructions:
  • Warm up your oven to 350 degrees F (175 degrees C).
  • Prepare all of the ingredients needed for the recipe.
  • Wrap the vibrant green bell peppers snugly in foil and arrange them in a baking dish. Bake in the preheated oven for 15 minutes until they are perfectly tender. Take out of the oven carefully.
  • Brown turkey in a skillet over medium heat. Set aside. Sauté onion, mushrooms, zucchini, red bell pepper, yellow bell pepper, and spinach in the same skillet. Return turkey to the skillet. Add tomatoes, tomato paste, Italian seasoning, garlic powder, salt, and pepper. Stuff green peppers with the mixture.
  • Place the peppers back in the oven and bake for another 15 minutes.
  • Enjoy piping hot!
