Stuffed orange bell peppers with flavorful ground turkey, onion, rice, tomatoes, and gooey Gouda cheese - perfect for a delicious and simple weeknight meal.
Ingredients:
  • 6 orange bell peppers, tops and seeds removed
  • 1 pound ground turkey
  • 0.33333334326744 cup chopped onion
  • 1 (14.5 ounce) can diced tomatoes, or more to taste
  • 0.5 cup white rice
  • 0.5 cup water
  • 1 teaspoon liquid smoke flavoring
  • 1 cup shredded Gouda cheese
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Boil a large pot of water and cook orange bell peppers until slightly softened, about 5 minutes. Drain and set aside.
  • Preheat a large skillet over medium-high heat. Cook and stir turkey and onion until golden brown and crumbly, 5 to 7 minutes. Remove and discard any excess grease.
  • Combine tomatoes, rice, 1/2 cup water, and liquid smoke with the turkey mixture in a skillet. Cover and simmer gently for about 15 minutes until the rice is tender. Take the skillet off the heat and fold in the Gouda cheese.
  • Fill each vibrant orange bell pepper with a delicious turkey mixture and arrange them in a baking dish, open side up. Seal in the flavors by covering the dish with aluminum foil.
  • Cook until bubbly and golden, about 30 minutes in the hot oven.
