Spicy stuffed peppers filled with seasoned ground turkey and zesty dirty rice for a delicious and hassle-free meal.
Ingredients:
  • 4 large red or green bell peppers, sliced in half lengthwise
  • 1 pound ground turkey
  • 1 (8 ounce) box dirty rice mix (such as Zatarain’s®)
  • 2 1/2 cups water
  • 1 tablespoon vegetable oil
  • 1 (14.5 ounce) can stewed tomatoes
  • 1/2 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to 375°F (190°C) for ultimate baking perfection.
  • - Preheat a large skillet over medium-high heat. Brown and crumble ground turkey for 5 to 7 minutes; drain any excess fat. Stir in dirty rice mix, water, and vegetable oil. Simmer, then cook on low until rice is tender, approximately 25 minutes.
  • Bring a pot of salted water to a vigorous boil. Add pepper halves in batches of 4 and cook until they start to soften, approximately 2 to 3 minutes. Drain in a colander.
  • Spread stewed tomatoes in a 9x13-inch casserole dish. Top with pepper halves, cut side up. Fill each pepper with dirty rice mixture and sprinkle with cheese.
  • Bake until the filling is warm and the cheese is gooey, approximately 15 minutes in the preheated oven.
