Slow-Cooker Pizza-Stuffed Peppers

Create indulgent stuffed peppers with turkey, pepperoni, and gooey cheese - a cozy homemade dinner.
Ingredients:
  • 1/2 cup uncooked orzo or rosamarina pasta
  • 4 cups boiling water
  • 6 small bell peppers (about 5 oz each)
  • 1/2 package (1 1/4-lb size) lean ground turkey (about 10 oz)
  • 1/2 cup diced pepperoni (about 2 1/2 oz)
  • 1 can (15 oz) pizza sauce
  • 1 1/2 cups shredded pizza cheese blend (6 oz)
  • 1/2 cup water
Instructions:
  • First, cook the pasta in a 2-quart saucepan with 4 cups of boiling water for 3 minutes. Then, drain the pasta and rinse it with cold water to cool. Make sure to drain it well. Next, slice off the top of each bell pepper and reserve them. Remove the seeds and membranes from the peppers, and rinse them. Finally, slice a thin piece off the bottom of each pepper to ensure they can stand upright.
  • In a large nonstick skillet, sauté turkey and pepperoni over medium-high heat for 4 to 6 minutes until turkey is no longer pink. Drain if needed, then add pizza sauce, 1 cup of cheese, and cooked pasta. Fill peppers with turkey mixture.
  • Prepare the slow cooker by spraying it with cooking spray. Pour in 1/2 cup of water. Stand the peppers upright in the cooker and replace their tops. Cover and cook on Low heat setting for 4 to 5 hours.
  • Remove the tops of the peppers and set them aside. Sprinkle the remaining 1/2 cup of cheese over the filling. Cover and cook for an additional 5 to 10 minutes until the cheese is melted. Lift the peppers out of the cooker using a large slotted spoon, supported by tongs to keep them intact (avoid squeezing). Serve garnished with the reserved pepper tops.
