Low-Carb Cauliflower Rice Sushi Rolls

Try these flavorful low-carb sushi rolls with homemade cauliflower rice, tuna, avocado, and cream cheese.
Ingredients:
  • 1 pound cauliflower, cut into florets
  • 5 ounces cream cheese, softened
  • 1 tablespoon rice vinegar
  • 3 teaspoons monkfruit sugar substitute
  • 6 ounces sushi-grade ahi tuna, cubed
  • 1 dash Sriracha hot sauce, or more to taste
  • 3 sheets nori (dry seaweed)
  • 1 medium avocado - peeled, pitted, and sliced
  • 2 tablespoons sesame seeds
Instructions:
  • Rice cauliflower by pulsing florets in a food processor.
  • Set up a steamer in a saucepan with water just below the steamer. Once boiling, steam cauliflower rice covered for approximately 10 minutes, stirring occasionally.
  • Combine cauliflower rice with rich cream cheese, tangy rice vinegar, and a touch of sweetness in a bowl. Let it cool in the fridge for approximately 1 hour until perfectly chilled.
  • Combine the chopped tuna and Sriracha in a separate bowl, adjusting the spiciness to your liking.
  • Evenly spread one-third of the cauliflower mixture on a plastic wrap-covered bamboo rolling mat to form a square similar in size to a nori sheet.
  • Lay a sheet of nori onto the cauliflower rice. Add 1/3 of the avocado slices and tuna along one edge of the nori. Roll up tightly, starting from the edge with the fillings. Sprinkle with 1/3 of sesame seeds and cut the roll into 6 slices. Repeat the process with the rest of the ingredients.
