Low-carb cauliflower rice swaps for regular rice in a flavorful stuffed bell pepper casserole.
Ingredients:
  • 1.5 pounds cauliflower, cut into chunks
  • 2 pounds ground beef
  • 1 (16 ounce) can tomato sauce
  • 3 medium bell peppers, diced
  • 0.25 cup shredded Cheddar cheese, or to taste
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Pulse cauliflower in a food processor until it resembles rice grains. Be careful not to overprocess to avoid mushiness. Transfer to a dry skillet and cook over low heat to remove moisture.
  • In a hot skillet, brown and crumble the ground beef for 5 to 7 minutes until cooked through.
  • Combine riced cauliflower, tomato sauce, and bell peppers with the meat. Transfer the mixture to a casserole dish and sprinkle Cheddar cheese on top.
  • Bake in the hot oven until beautifully golden, for 45 minutes to 1 hour.
